Description of the appellation : In the mountains of Haute-Savoie, the village of Abondance has given its name to a valley, a breed of cow and a cheese! The use of a copper cauldron and the filling of the cheese with cloth by the farmers are specific to this semi-cooked cheese, as is the pressing in a circle which gives a concave shape to its heel. We say "Un" Abondance!
