Where Beaufort cheese has been made since 1932 and until 1978, there seemed to be no future in sight for Longefoy's old fruitière, with its typical vaults and exposed stone cellar.
Because "L'Autrefoy" is not only a focal point that brings the village back to life, but also pays tribute to the history of Longefoy and its fruitière through a respectful and inspired renovation, the project has "got most of the locals on board".
The photographs and objects from the past that have (re)taken their place in the place are no coincidence: (original Beaufort press, tools, skimmer, cauldron and hearth being restored...).
In the staircase leading up to the restaurant, the personalized wallpaper highlights the period images and the villagers' handwriting found in the register of the fruitière, ... A lively address, where the village's past and future are inseparable.
